My Recipes: Red Wine Beef & Potatoes

This recipe was the result of both the husband and I wanting a simple, solid meal. And I had a bottle of red wine (Malbec) open and wanted to use a wine sauce, but couldn't find any recipes for it that weren't complicated, required 15 ingredients or didn't take two hours. So I just poured some in the pan, along with some meat, a little potatoes, clean flavors... and this was the outcome. Tasty!

Ingredients
1 lb. bag baby potatoes (I used fingerling potatoes - wash and throw in pot!)
2-3 cups baby tomatoes, washed and whole
Beef chunks (I bought the package of beef for making stew)
Half a large onion, sliced
Basil, dried or fresh
Steak seasoning
Ground sea salt & pepper
A glug or two of red wine, any kind works!

Toss your washed potatoes into a pot of boiling water and let boil for about 8-10 minutes. It shouldn't take too long until they become nice and tender.


While the taters cook, swirl some EVOO into a large saute pan and add your onions. 
Cook until some of the edges just start to turn brown.


Next, add your beef and tomatoes. Sprinkle liberally with steak seasoning and basil. Then pour in a glug or two of that wine around the pan. Stir often to ensure the meat is getting cooked on all sides, and continue to cook until it's reached desired doneness. 


Add in your potatoes and give everything a really hefty dash of sea salt and cracked black pepper, then make a few good stirs and be sure the potatoes are heated and coated in all the sauce. Serves 3-4 people.
